* Quality - Our crab meat dishes are made with only Atlantic blue crab (Callinectes sapidus.) The taste of this crab meat is tremendously superior to the commonly available frozen or pasteurized Asian crab meat. Yes it's more expensive, but definitely worth it!

* Freshness - Crab cakes, deviled crab cakes, crab dip and crab imperials are all vacuum packed before being quickly frozen. Vacuum packaging removes air in the package, eliminating the chance of freezer burn. Most importantly this maintains the delicate texture of the crab meat. To complete our commitment to freshness, all perishable packages are shipped FedEx overnight.  Hardshell crabs are steamed and thoroughly chilled before being individually hand packed into your insulated container.  Most orders are delivered by FedEx within 24 hours of leaving our restaurant.
